Something about a chia pudding
There is just something about a chia pudding which shouts out “SUMMER!” to me. For me, they’re not just for brekkie, they’re for that time of day or night when I’m not feeling super hungry but want something delicious which will still satisfy and tastes AMAZING! Here’s my basic chia pudding recipe which you can mix and match fruit and toppings with to make different every time.
Ingredients
6 tbsp white chia seeds
350ml unsweetened non-dairy milk
1-2 tbsp toasted, chopped macadamia nuts
1 tsp rice malt syrup
1 tbsp Juice Plus+ Complete (optional – see Tips)
pinch of salt
Topping ideas
dollop of full-fat natural yoghurt
toasted chopped nuts
toasted coconut flakes
chopped or pureed seasonal fruit
sprinkle of ground cinnamon
Method
- Combine all the ingredients in a jar with a wide opening and mix well. Refrigerate overnight or for a minimum 2-3 hours.
- To serve, either dig straight in or add some of your favourite toppings (or mine from the Topping ideas above!) for extra crunch and flavour. Get creative and mix and match as you prefer!
