Something about a chia pudding

There is just something about a chia pudding which shouts out “SUMMER!” to me. For me, they’re not just for brekkie, they’re for that time of day or night when I’m not feeling super hungry but want something delicious which will still satisfy and tastes AMAZING! Here’s my basic chia pudding recipe which you can mix and match fruit and toppings with to make different every time.

6 tbsp white chia seeds

350ml unsweetened non-dairy milk

1-2 tbsp toasted, chopped macadamia nuts

1 tsp rice malt syrup

1 tbsp Juice Plus+ Complete (optional – see Tips)

pinch of salt

Topping ideas

dollop of full-fat natural yoghurt

toasted chopped nuts

toasted coconut flakes

chopped or pureed seasonal fruit

sprinkle of ground cinnamon

  1. Combine all the ingredients in a jar with a wide opening and mix well. Refrigerate overnight or for a minimum 2-3 hours.
  2. To serve, either dig straight in or add some of your favourite toppings (or mine from the Topping ideas above!) for extra crunch and flavour. Get creative and mix and match as you prefer!

Juice Plus+ Complete is the vegan protein and macro/superfood powder I choose to use in my smoothies and in a lot of healthy desserts. It’s 100% plant-based, all natural ingredients and really good for your gut too. Find more information on the Juice Plus+ products here.

Step outside the box when you think of when to eat this yummy dish. Yes, it’s great as a ready-to-go breakfast but how about to pack to take to the beach or for a light sweet dinner idea too.
