Haloumi and Pear

This recipe from The Juicy Life Program is one of my all-time go-to recipes in winter. It’s light and easy, so ideal for when you’re not too hungry but because it’s warm too, it makes it really satisfying in these cooler months.

1/2 – 1 tsp coconut oil

2 slices haloumi cheese (about 5mm thick)

1/2 pear, cut into wedges

small handful walnuts

1/2 tsp rice malt syrup

sprinkle of ground cinnamon

pinch of ground cloves

squeeze of lemon juice

Grab a small, non-stick frying pan and place over medium heat. Add the coconut oil, haloumi, pear and walnuts to the pan. Move it all around so the oil coats everything evenly, then sprinkle some ground cinnamon and cloves on top.

When the under-sides of the haloumi and pear are nice and browned, turn over and cook on the other side. Add a little more ground spices, drizzle with rice malt syrup and lemon juice, then give everything a gentle toss in the pan and serve.

You can totally mix up the fruit to whatever is in season. Try using apples, peaches or nectarines instead of the pears.
