Top 3 Toast Toppings
Sometimes nothing fits the bill quite like toast and there is absolutely no reason why it can’t be nutritionally balanced and delicious.
Here are my three favourite toast combos, which coincidentally each contain three toppings. How fitting. I enjoy these with gluten-free chia and quinoa loaf.
Serves 1
Nut Butter, Banana + Coconut
Ingredients
1 tbsp desiccated or coconut flakes
1-2 slices of bread of choice
1 tbsp nut butter of choice or unhulled tahini*
½ small or ¼ large banana, sliced
Method
If using coconut flakes, place in a dry pan over low heat to lightly toast.
In the meantime, toast the bread to your liking. Once the bread is toasted, give each piece a good smear of nut butter or tahini. Add an even amount of the banana slices to each piece of toast and then sprinkle coconut over the top. Yum.
Avocado, Goats Cheese + Dulse Flakes
Ingredients
1-2 slices of bread of choice
½ small or ¼ large ripe avocado
30g goat’s cheese or traditional feta
sprinkle of dulse flakes
Method
Toast the bread to your liking. Once it’s done, smear each slice with a thick layer of avocado, some crumpled goats cheese and a sprinkle of dulse flakes.
Ricotta, Blueberries + Rice Malt Syrup
Ingredients
1-2 slices of bread of choice
2-3 large tbsp ricotta
¼ cup fresh blueberries
drizzle of rice malt syrup
Method
Toast the bread to your liking. Then spread each piece with the ricotta, feeling free to add more if you want a nice, thick layer on each slice. Just don’t overdo it! Sprinkle the blueberries evenly over the top, then drizzle with a little rice malt syrup.
Tip
You may like to enjoy two slices of this heavenly combo, however I often like to have one with a small bowl of chopped fruit, nuts and yoghurt on the side.
